First of all, all trains in Hong Kong whether underground or above operate under one company and system called MTR (Mass Transit Railway). The reason you’re a little confused is because the “train” and “subway” used to be 3 separate systems until a few years ago, but the 3 have now merged so that it does not make any difference whether you board a train or subway, ultimately you can arrive at Lo Wu or Lok Ma Chau within one ticket ride without having to leave a station. As you can see from the MTR system map (see link below), there are 11 lines that cover the entire Hong Kong region, from any station you can go anywhere within, the question is to find out if you need to interchange to another line(s) to get to Lo Wu.
Both Lo Wu and Lok Ma Chau terminals are literally on the border. After you get off the train, there is the Hong Kong Customs which is connected to the Shenzhen or Huangguang Customs, you just walk over to another building next door and you’re in another jurisdiction. When you change or board the East Rail line, the sky blue line, make sure you know if the train is going to Lo Wu or Lok Ma Chau, these 2 run on the same rail track all the way until the 2nd last stop.
